In a bowl combine:
1/2 cup mirin
1/2 cup low sodium soy sauce
1/2 cup soy sauce
3 tablespoons sugar
4-6 cloves diced garlic
2-3 lb skinless chicken thighs cut into small pieces
1/2 cup low sodium soy sauce
1/2 cup soy sauce

Marinade overnight in a bowl or plastic bag.
Coat chicken evenly with cornstarch using a plastic bag or bowl.
Deep fry the chicken 3-4 min.
