For one slab of pork back ribs, I use the measure of 1/4 cup to make the ribs to ensure the right amount of liquid in the instant pot. Cut the ribs and put in the Instant Pot.

Add into the Instant Pot:

1 measure of Chinese cooking wine

2 measures of dark Chinese vinegar

3 measures of sugar

4 measures of soya sauce

5 measures of hot water

Close the lid. Press Manual, high pressure for 15 minutes. Forced ventilate. Take out ribs. If desired, reduce the sauce by simmering a bit under ow heat to thicken the sauce. Pour sauce over ribs. Garnish with green onions. Make sure you have plenty of rice. You can reduce the time by 2 minutes to get a more chewy texture on the ribs.

You can switch the wine and vinegar order for less vinegar hit.
