Lobster in plum sauce

Ingredients.
You need lobster,
Flour ( rice and tapioca flour mix 1 to 1 ratio).
Green onion (the white section), more is better. Cut in small pieces about 1/2" Long.
Jalapeño pepper ( your taste) slice to 1/8” thick.
Mince garlic, 1 tablespoon or more.
Plum sauce and oysters sauce ( I use premium one for Oysters sauce and Dynasty brand for Plum sauce).
Cooking oil.
Butter 1 bar about 3 tablespoons (you can use oil too).

Cut lobster into pieces,

Apply dry flour on the lobster, and deep fry for about 2 minutes ( do not fry more it will over cook the lobster).

When you done with all, take out put in the tray.

Mix plum sauce and oysters sauce together ratio 1 to 1, for 4 lbs of lobster I use 4 tablespoons each kind.

Melt butter or oil in a large pan, put mince garlic, cook until golden and pour all of the sauce into the pan, wait until it thickens a little and put all lobster in the pan, mix throughly for couple minutes, and pour all chopped green onion and jalapeño in, mix throughly and add butter in the pot & mix well. 

When done, take all out put on a large dish. Yummy served over noodles.
