INSTANT POT BOSSAM (KOREAN SEASONED POACHED PORK BELLY 보쌈)

Cook's note: the purpose of cola is to remove any unpleasant pork smell. You don't need a lot, but a little will help.
Cook's note: the purpose of cola is to remove any unpleasant pork smell. You don't need a lot, but a little will help.
Ingredients:
2 or 3lbs of pork belly (or as much as you want, as long as the pork remains submerged in the liquid and fits the Instant Pot!)
4 cups of hot water
4 cups of hot water
1/2 cup total (mix of doenjang, Japanese red miso, and shiro miso)
1/2 can cola
2 tbsp of sugar
2 tsp salt
10 peppercorns
1 whole garlic bulb
1 onion
Small knob ginger
4 bay leaves
Directions:
Add hot water and miso to Instant Pot. Stir until miso is dissolved.
Add rest of ingredients
Set on Manual for High Pressure for 20min
Allow for 10min on Natural Release and then vent remaining pressure
Remove pork and cool for 3min - 5min.
Using a very sharp straight edge knife, cut thin slices of pork skin side down.
Serve with steamed rice, ssamjang, spicy radish salad, pickled napa cabbage, lettuce leaves, perilla, and pickled diakon slices.
