Macaroni and Cheese (or Cheese and Macaroni)
Serving for 12
1 16 oz package of large elbow macaroni
Combined 12 oz of velvetta, extra sharp cheddar, mild cheddar, monterey jack and queso fresco
½ pint half and half
½ pint low fat milk
2 cups low fat butter milk
1 tsp. baking powder
Bring pasta to boil al dente (approx. 8 minutes)
Preheat oven to 300
Slice or grate all cheeses
In a deep baking dish, add cooked pasta, 80% of cheeses and baking powder, mix well
Add liquid ingredients
Bake for 1-½ hours
Top with remaining 20% cheese and bake until melted
For healthier option, reduce cheeses and creams proportionately
