Oxtail Bone Broth Recipe
Ingredients:
2 lbs of oxtail
1 lb of bone-in beef shank
4 cloves of garlic
2 tsp of salt
1 tbs of mirin (optional but it adds some body to the soup)
1 strip of seaweed/konbu (optional: we add it in for taste and to help with my thyroid function)
Recipe:
• Blanche the oxtail and beef shank
• Put everything into the pressure cooker
• Cook it on high pressure (can repeat this step once or twice to make the broth more milky). 30 mins and let it depressurize! And yes to skimming the fat.
• Season with salt to taste
• Sprinkle some chopped green onion and enjoy! We like it with rice and kimchi.
