Chicken Ragu with French baguette. Comfort food on the table. It’s also a great dish for camping as well. You can make this ahead of time and warm it up at your destination.
2 lb chicken thighs w/ bones
1 tbsp seasoning mix
1 tsp garlic powder
Sprinkles of black pepper
Marinade for 20 min/overnight
Sear carrots & potatoes with minced garlic and 1 tsp of seasoning mix. Transfer to a bowl.
Add marinaded chicken, tomato paste, coco Rico, 1/2 cup water, 1 tsp seasoning mix, seared potatoes & carrots, peas, brown onions (quartered), 1/2 tbsp of chicken bouillon, & 1 tbsp of fish sauce.
Cover and cook on low for 40-45 min. Season to your liking with seasoning mix, fish sauce, and/or sugar. Garnish with cilantro and enjoy with baguettes.
